A journey through the sea of flavors - on the Baltic waves
According to R. Kogel, DFDS has been looking for a chef for some time to turn a traditional ferry restaurant into a gourmet, top-quality kitchen and give passengers an exceptional experience. Chef D. Praspaliauskas accepted the challenge to create a menu for the floating restaurant Mare Balticum in the autumn, having received an offer from DFDS to prepare a gourmet dinner on the waves.
"It was very important for me to find a common approach to food: only the freshest, highest quality products should be used for it, and the principles of regional and seasonal cuisine should be followed. Finally, food is prepared with professionalism, love and, most importantly, creativity. I have seen that the DFDS team - both the management and the galley team - have this approach. Therefore, now the fun part remains - to create unforgettable impressions on the Baltic waves, ”says chef D. Praspaliauskas about the new gastronomic challenge.
The menu created by D. Praspaliauskas pays special attention to regional cuisine, focuses on seasonal products of local producers, it is rich in fish dishes: trout ceviche, tuna salad, Matjes herring, seafood soup, menu decoration dorada and other delicacies.
“My goal is for people to discover special, new combinations of flavors, enjoy different textures and creative food presentation while tasting my dishes. Dinner is a process in which you can constantly discover something new, interesting, feel an unexpected aftertaste. We want to give the restaurant's customers an exceptional experience - a trip to the sea of flavors on the Baltic waves, ”says D. Praspaliauskas.
Dinner - for both gourmets and lovers
DFDS constantly invests in the quality of passenger service. According to R. Kogel, ferries have long been not just a vehicle for convenient access to Western Europe or Scandinavia overnight: “The services offered here broaden the horizons. A high-class dinner at the Mare Balticum restaurant is a great gift for travel-thirsty gourmets, who are waiting for us in our ferries after the release of quarantine regulations. ”
The director of DFDS on board ships for the Baltic States notices that those who want to give an exclusive gift to the other half are also worth thinking about a gourmet dinner on the sea waves. "As vaccination rates increase, we expect the travel sector to recover during the warm season. Now it is possible to give not only a travel ticket, but also a gourmet dinner at two restaurants on the water, ”advises R. Kogelis.
From May, dishes created by D. Praspaliauskas can be tasted on DFDS ferries sailing from Klaipeda to Kiel (Germany) and Karlsham (Sweden) and from Paldiski (Estonia) to Kapelskar (Sweden).
