DFDS’ Food, Beverage and Hotels Category Manager, Dave Lewis, has been honoured with a prestigious Menu Innovation & Development Award (MIDAS), recognising the best menu development and executive chefs from across the hospitality industry. 

The awards are judged by a panel of mystery diners, who tasted and assessed the menu concepts put forward in each category. Dave Lewis, who has responsibility for the development and design of menus for restaurants across DFDS’ cross-Channel and Newcastle-Amsterdam fleet, was the overall winner in the Leisure & Travel category. 

Steve Newbery, Onboard Commercial Director at DFDS, said: “I’m very proud that DFDS has won this menu innovation award as it is a recognition of all the hard work and energy that Dave and his team have put into the development of our choice of menus across our UK-Continent routes. 

“Whether our guests are travelling on our short routes between Dover and France, or enjoying our overnight service between Newcastle and Amsterdam, we always aim to deliver a great experience. This award is confirmation that we are on the right track.” 

Dave joined DFDS in 2017, having trained as a Chef at five-star hotels, including The Waldorf in London, and award-winning restaurants before moving into food development across the catering sector. He said: “I am incredibly passionate about food and from early in my career, I understood the importance of good quality ingredients to provide diners with the best quality dishes. We have a clear focus on our customers at DFDS and we take great pride in continually seeking improvements to ensure every journey is a memorable experience and a great start to customers’ holidays.” 

Dave pioneered DFDS’ Field to Ferry concept, which celebrates the great quality of fresh, seasonal produce provided by the company’s carefully selected food suppliers.  Products are ethically sourced from UK suppliers, with full traceability and great quality delivered directly from field to ferry.
